The Tower of London, of course. Also, I don't know if you can tour it, but you can at least see St. James Palace from the Mall.

If you want to go to Windsor I would suggest taking the train, it's a 35 minute trip from Paddingon Station. When you get to Windsor it's a three minute walk to the main road from the station and the castle is right across the street when you get to the main road. A bus would take over an hour.
You might check to see if your local library has back copies of "Britain" magazine (it is put out by Visit Britain). Thyey often have articles about "statley" home, Mannors, castles, etc.
Some places in London to consider are Spencer House (only open on Sunday), Sir John Soane's Museum, and the Wallace Collection (the house which holds the collection is quite impressive),
Outside of London, there is also Hampton Court Palace.
Thanks for all of the great suggestions! Kensington Palace is closed for the week we'll be there (bummer!)...but I'm looking at Windsor Castle and Hampton Court and Spencer House....between the three, which would you recommend?
Out of those three I would highly recommend Windsor Castle.
Winsor is wonderful! It is my favorite European castle. We saw it before the fire, right after the fire and after they rennovated. The displays include things they learned as the repaired it after the fire.
Thanks! If we got on an early train, do you think it's possible to see Windsor Castle in a 1/2 day? I was thinking, we would get there at opening (9:45) spend 2 hours, and be back in the city before 1pm?

Yes, 1/2 day in Windsor is good. I would recommend going by train it's only a 35 minute train ride. Taking a bus would take you over almost an 1 1/2hrs to get there. As you exit the castle turn to your right and walk down to the main road. Then turn to your left and follow the road to Great Windsor Park, you have a fantastic view of the Royal residents from the part. Also, the Long Walk which is the private road for the Royal family to use to enter and exit the castel. It's so peace and very enjoyable in Great Windsor Park. As you exit the castle the is the Horse & Groom Pub across the street which has great food.
