do they have on site tours or guides at Hampton Court or should you book one through a tour company in London?

There are tours there. When we visited in 2004, we took one without arranging in advance.

They also have a detailed audio guide for the palace itself which was very informative. Check out the hampton court palace website for more information on what's offered.
