Glutin intolerance and restaurants in England and Wales

We will be on a 15 day vacation in September in North Wales, Cotswolds, Lake District, and Canterbury. My wife is glutin intolerant. I wondered about restaurants in these areas or other advice anyone can give me. Many thanks, Carl
