No problem getting from Gatwick to Victoria. But then how to we get to our hotel at the NW corner of Hyde Park (Hyde park Hilton)? Don't see us walking through the park lugging our suitcases, and taxis look so expensive...any better ideas?

If you have big luggage a taxi would probably be easier. The other options is the tube, at Victoria Station go the tube station get the Circle Line or District Line to either Bayswater (the hotel is a five minute walk) or go to Notting Hill Gate tube stop and get the Central Line take it to the first stop Queensway tube station, hotel is next to the tube station.
If you have large luggage it would be easier for you if you go from Victoria (they have escalators) to Notting Hill Gate (escalators) then to Queensway (elevators they call lifts). Bayswater has only steps and they might be a lot, I can't remember.
