Great to see that you're ready to focus on what really matters!
My wife and I spent two weeks in Ireland last month. Here are a few of our favorites:
Dublin
Stag's Head: Beautiful wood interior. Just a stone's throw from Trinity, but down an alley off the main street and so it's not very touristy.
Brazen Head: Claims to be the oldest pub in Dublin. It's a small squat stone building and does give a good feel of an old school pub.
Cobblestones: Probably the best place to hear traditional Irish music in Dublin. It's in Smithfield Village near the distillery. Real sessions where musicians just gather to play whatever strikes their fancy.
Dingle: Dingle Pub is a great, traditional pub. Dick Mack's is so traditional that it used to double as a cobbler's shop (back in the day, many pubs also served as grocery stores, hardware stores, etc.)
Not a pub, but Max's Wine Bar in Kinsale is a great place for a "splurge" dinner if you're looking for that.

All suggestions are music oriented - Dingle in particular has fantastic music.
Dublin: Ha'Penny, Gogarty's (the musical pub crawl is a fun educational tour, leaves from the upstairs part of the pub).
Kinsale: An Seanachai, Spaniard
Dingle: O'Flaherty's and Small Bridge
Beachcomber Pub...........in Dublin
Dingle has some great little places .........along the harbor front.............

We were in Ireland a little over a month ago, and stopped in MANY pubs!
Here are some of our favorites:
Kinsale: White House (we listened to music there for a few hours. It was a lot of fun.)
Dingle: Dick Mack's, Foxy John's, O'Flaherty's, Small Bridge (in Gaelic: Droichead Beag)
Galway: Paddy's (the bartender there gave us a shot of "little Guinness" Try it!, Kennedy's, Taafey's
Have a pint of Guinness for me! It just doesn't taste the same here!
