Evening Buffets at Hotels in Scandinavia

As I've looked at potential hotels in Scandinavia, I've noticed two chains that sometimes offer an "evening buffet." They are Clarion and Thon. Not all hotels under these companies offer it. Has anyone stayed at any of the hotels in these chains that have that dinner buffet? All things being equal, would it be a reason to choose a hotel with it over one without?

We stayed at three hotels in the Norwegian fjords, two of them were the lovely old wooden historic hotels. All three offered buffets, all buffets were "meh." Our waitress at one of these hotels told us the reason for the prevalent evening buffets: The cooks work daytime hours, during which they prepare the evening food. Most of the buffets featured a lot of steam tables - reminded me of upscale cafeterias. If you are staying out in the country, there may not be any other choices, if you are staying in an area with restaurants, avoid the evening buffets, unless you like being reminded of dorm food days.
