Easter week, flying into Manchester

My husband and I will be spending a week going around from Manchester. We will be renting a car. We would like to stay somewhere where it is easy to find shops and food in the evening after a day going around. We have already visited the lakes, Wales, Peaks and area around York. We would like some suggestions of places to stay into and routes which we can follow. We like to drive in the countryside and stop for lunch or picnic and do walks.
