Easter in Ireland

We're arriving in Shannon Ireland on Easter Sunday. I'm wondering if any grocery stores or restaurents/pubs will be open or should we pack food for a couple of days. How about Easter Monday also?

If you drive into Shannon itself there are a couple of grocery stores right there, but I really don't know if they will be open on the holiday. You're more likely to find a gas/convenience store open somewhere.
