Blarney Castle and grounds is just next to Cork City, and is well-worth a visit (particularly the Blarney Woollen Mills store right next door). Cobh is a cute little town on the coast with a fascinating museum called The Queenstown Story, about the history of Cobh as a seaport (and its relationship to the Titanic). Midleton is the home of the Jameson Distillery, where you can see the whiskey making process and have a whiskey tasting at the end. You'll also be close to Cahir and Cashel, in Co. Tipperary.
You might look at staying in Kinsale. It is a wonderful seaside village with good restaurants, hotels, B&Bs, historic sights, and tons of ambiance. Assuming you have a car, it's also very easy to drive to Cork City, Cobn, and Midelton. Check Rick Steve's book - we stayed at The Olde Bakery (listed in the RS book and #1 on Tripadvisor) and had a fabulous time.
