Has anyone ever stayed in one of the castles in the highlands of Scotland? What was your experience? Recommendations? Any places that we should avoid? Since we are making this trip to Scotland, how can I go and not stay in a castle!!

I have stayed in a "luxury" castle - Stonefield in Argyle and in a youth hostel castle in the north Carbisdale. They were both great experiences. I would suggest looking at websites like this one http://www.historic-uk.com/StayUK/Scotland/index.htm to explore places that you might want to try.
