Can the railpass be used from Gatwick to Edinburgh, via London?

Probably be cheaper and faster to get an easyJet flight from Gatwick to Edinburgh

Yes, but not on the London Underground, which you will need to get from Victoria Station if you use Southern or Gatwick Express to Kings Cross for East Coast or Euston Station for Virgin. If you take First Capitol Connect to Kings Cross then East Coast you won't need the Underground.
