Hello!
We'll be going the economy route most of our trip but I wanted to take my wife somewhere classy and fun for dinner in Edinburgh on her birthday - any suggestions?
Thanks!
Cory.

I wish someone would take me out for my birthday at any of these restaurants:
The Witchery http://www.thewitchery.com/home.html
Stac Polly http://www.stacpolly.com/
The Tower Restaurant http://www.tower-restaurant.com/main.html
Creelers http://www.creelers.co.uk/
But you might want to do your own research at the Taste of Scotland. Here's the direct link to Edinburgh http://www.taste-of-scotland.com/towns/2005/Edinburgh.html I also spotted this review site. http://www.bottlenose.demon.co.uk/food/edinburgh/index.htm

How 'bout dinner in a castle just outside of Edinburgh?

We stayed there for my 30th birthday and the service is exceptional! We had the full dinner with a big bottle of wine and then once you were full, they took you on a tour of the castle. Its fabulous. (Note my mum's comment on the front page of the website!)
Another vote for The Witchery.
