Cruising this summer, we will be stopping in Corfu. We would like to do a beach day with snorkeling or even rent a scooter and tour the island. Any suggestions about pretty, accessible beaches, roads to take, or villages to see?

Corfu has been a recreation destination for at least 150 years. It has exceptional beaches on the eastern shore, palaces and villas galore, and an imperial retreat (Achilleon) that was the favorite of Empress Sissi. It's more temperate than the Agean and not as crowded. Has great resorts, golf courses, and clean water. Nissaki Beach was a favorite of my sister (I haven't been there yet myself).
Google some of the hotels there: Louis Grand Hotel Glyfada, Hotel Pelekas Beach, Hotel Calimera or Hotel Delfinia in Moraitika, and so on to get an idea. Tripadvisor.com may also offer better insight.
