I'm a vegetarian and had no problems finding food to eat in Turkey.

At the intro. meeting your guide will ask you if you
are vegetarian. In our group seven were and each meal had a veg. option. After 12 days you get very
tired of eggplant stew! Other than entrees, you'll
have no trouble at all finding meat-free dishes.
