Vegetarian and vegan options in Prague, Budapest, and Vienna

We are going to be in Prague, Budapest and Vienna for 10 days in August. I've done a lot of looking, but haven't found many vegetarian or vegan options except for eating Indian food and falafel (both of which I love, but I am hoping to experience some local cuisine if at all possible). I am wondering if anyone has any recommendations for regional dishes or restaurants that fit the bill. I know that this corner of the world is meat heavy but its worth checking. Thanks in advance!

I have a vegan friend who lives in Prague. When I visit he normally find something he can eat on most menus. A couple of specifically vegetarian places are:

Country Life Melantrichova 15, which is just off the Old Town Square. It's cafeteria style and they charge by the weight. Simply load up a tray with soups, stews, salad whatever and pay at the till. I've only ever been at lunchtime, when it's full of Czechs having a working lunch, but I think it's open early evenings at least.

Klub Arkitektu in Betlémské námesti isn't vegetarian, but has quite a lot of veggie options.

Fresh fruits and breads abound in Austria, even in little 7/11 style markets, you can usually find them.

I've also found nearly any restaurant offered some kind of vegan menu, or vegan option. Rick's German language book has a great section on translation.

As for dishes to try, the Austrians are magic with potatoes, there is such a variety, and the are all so well done, it's hard to get sick of them. Ask the eatery.

Sorry, don't know about Prague or Budapest, didn't pay that much attention.

Cafe Patio in Prague was quite good and had a couple of options, as did two of the Kolkovna restaurants (tho it might have only been soup , cheese plates and Greek salad). Soul Cafe in Budapest was terrific- ate there twice in 3 nights; all listed in Rick's books.
The Asian restaurants of course have veg options, as do the Italian pizza and pasta; Pizzeria Rugantino in Prague was reasonably priced and good.
