Urgup or Goreme in Cappadocia? recommended Cave hotels?

All
My husband and I will be in Turkey for 2 weeks in September. We found a great hotel in Istanbul, and are now searching for a cave hotel for the second leg of the trip in Cappadocia. I've looked at Evi Esbelli, but there is only one $300/night room left. Can anyone tell me where the best town to stay in Cappadocia is, and a recommended cave hotel in that town? after cappadocia we're spending 2 days in Kusadasi, to spend one day at the beach and one day to see Ephesus. If anyone has Kusadashi hotel recommendations, we'd love to hear them. Thanks!

We spent 5 nights in Goreme last Sept. staying at the Sultan Suites Cave Hotel in one of the Junior suites.
http://www.sultancavesuites.com/ We found it to be a wonderful place with a beautiful view. Great breakfasts and very friendly hosts. They have an excellent restaurant and entertainment some night.

thanks, this is helpful. I also just read to stay away from Kismet cave hotel but that Travellers Cave hotel is nice. Between your suggestion and travellers, hopefully there will be availability thanks again

We spent 3 nights at Evi Esbelli but didn't pay $300! We loved the hotel but didn't like the town of Urgup as much as we liked Goreme. If we go again, we would prefer to stay in Goreme. Unfortunately, I'm not familar with the best cave hotels in Goreme. In Goreme, we stayed at Cappadocia Dora which I would not recommend!

Ah- very helpful. We weren't sure about whether to stay in Urgup or Goreme, but some additional reading plus your post convinced us on Goreme. We were able to book "Local Cave Hotel" (in Goreme )which rec'd very good reviews in Tripadvisor. Thank you for the information!

Goreme had a wonderful new bath/spa in town - seems that I passed a bike shop on the walk there. There is a nice hike from the edge of town up to one of the ridges above that gives a fine view of the area; I did this in lieu of a bus trip to sightsee the area, and was happy with that. Great walk-around village. Enjoy!

Thanks everyone. We wound up booking at the "Local Cave Hotel" - it was available and had good reviews on Tripadvisor. However I will still go check out the other suggestions, thanks. We're planning to hike and take a balloon ride while there, in addition to Open-Air Museum and underground churches/cities. If anyone else has particularly memorable experiences they would recommend (or great travel guides), I'm all ears. Keep the suggestions coming! It's been about 6-7 years since our last "big trip" (last one was Prague) and we can't wait! The more I read about how wonderful Turkey is, the more excited I get THanks to everyone for suggestions......
