Do Turkish merchants accept Euros and do Greek merchants accept Turkish Lira? If so, is it limited to the Aegean border regions? And would the exchange rate they apply be reasonable?

nobody accept lira in greece. euro is accepted everywhere and worth keeping, i'd not mind pay a small exchange fee to get lira. think about how negotiation is fun in lira already, you want to put exchange rate on top of that?

No, it's not worth doing. It's always best to use local currency - you'll pay a premium otherwise (for the convenience)
