Do I need to bring a hairdryer for the countryside (outside Istanbul)?

It depends on what you mean by countryside. If you are talking about typical tourist areas--the Aegean and Mediterranean coasts, Cappadocia, Ephesus, Pamukkale--then, no. You may have to ask at the front desk, but there will almost certainly be a hairdryer you can use. Off the beaten tourist track, though, I would bring one (and do myself.) Hotels outside of touristed areas mainly cater to male travelers and so often don't have hair dryers.
