Is it preferable to rent a car to travel from Trieste to Dubrovnik or is it better to use train or bus transportation?

Renee, I have taken the train from Zagreb to Split, but there isn't train service south to Dubrovnik. I made that leg by bus. If you plan to mainly stay in Dubrovnik, I wouldn't rent a car. Conversely, if you want to do a lot of day trips around Dubrovnik, car rental may make sense.
