The Best of the Republic of Macedonia?

I am both looking for, and providing information about Macedonia. Please read the growing list below (compiled through personal research done on the internet). Please add, or edit items to list as you see fit. If you live in Macedonia, or consider yourself an expert on the country then please contribute your tips, hints, and favourites based on the criteria listed below. Once complete, this list should help visitors find exactly "the very best in Macedonia".

CRITERIA for LIST:
-memorable/dramatic scenery & landscape photography. Where to find the best (viewpoints, vistas, city views, panoramas, skylines, sunsets, etc..)?
-the unique outdoors, hikes/hilltops/lookouts, and amazing views?
-lovely/charming streets, cute villages, hidden nooks/places, and magnificent/attractive architecture?
-authentic/unforgettable "local" travel experiences (i.e. non-typical, interesting/special experiences (full of original character), and unique only to the local area).
-the best freebies (museums, galleries excluded)
-specialty/unique regional cuisine/gastronomy (or the BEST places to eat (w/ local's prices, food made with love/regional favorites, and not too many tourists eating there)),
-anything else off-the beaten path.

Memorable:
the church of Sveti Naum? just a 100 yards from the Albania/Macedonia border.

The view from the church (St. Johns?) just outside Ohrid - the one you see in all the guidebooks.

I would agree with Tom that Skopje has to be one of the most ugly European capitals.

Also, you may want to check out Balkanology.com where the guy has covered a lot of the same information you are trying to collect.

Just some comments before I add to the list. I was last in Macedonia in 2002, and unless things have changed significantly since then, many of the adjectives we use to describe little niches of western Europe ("authentic", "unique" "cultural", "orignal character") do not quite have counterparts in Macedonia. Granted, I didn't see Lake Ohrid, but here are the terms I would use to describe Macedonia- gray, post-communist, run-down, poverty. The overwhelming character of this country struck me as not some colorful little culture waiting to be discovered, but a generic, polluted, depressed ex-communist society. The cuisine is nearly identical to that of the surrounding countries, like Albania, Bulgaria and Serbia. Despite its scenic mountain surroundings, I would rank Skopje as one of Europe's ugliest capital cities. What constitutes a tourist industry around the capital is not geared towards helping visitors discover uniquely "Macedonian culture", but pointing them to places like "Alexander's Palace Hotel and Casino". Finally, realize that the very concept of "Macedonian culture" is somewhat controversial, with the Greeks, Serbs and Bulgarians claiming that "Macedonian" is a largely artificial construct.

OK, I don't want to make it seem like Macedonia is a completely awful place that you should absolutely avoid. It isn't, but neither is it exactly a hidden gem awaiting discovery. I just wouldn't go out of my way to visit unless crumbling 1950s communist architecture interests you (the caveat being Lake Ohrid, which I have not visited)...

So let me add a few things to the list:
-memorable/dramatic scenery, landscape photography: The views of Skopje and the surrounding mountains from the hills surrounding the airport are quite scenic (the city looks less attractive on closer inspection). Some of the hilly terrain between the airport and Kumanovo looks almost primordial. And the scenery along the E871 over the mountains into Bulgaria is spectacular.

Skopje was practically completely destroyed by an earthquake in 1963. Almost everything what you see was built after that year.
