I'm considering renting a car and spending a week wandering around Hungary, Poland, and adjacent countries. How safe is this? Should I stick with Austria, Germany, and Switzerland?

It's just an impression, but I've been to all these countries and I feel just as safe in Poland & Hungary as in western Europe, if not more so. I found both the Polish & the Hungarian people extremely friendly and hospitable.

Safety is no concern in any of these places for a single woman. I've been to all of them and had no problems at all. On the contrary, particularly in Poland I found plenty of friendly, helpful folks. Border crossing with a rental car may add substantially to the cost, though. You might want to consider using trains, especially if you are planning on spending time in any of the cities, where a car is more of a headache than an advantage.

I would leave the car and take the train. I backpacked by myself 2 years ago through Poland, Hungary, Czech Republic and Romania and never encountered any problems. Talked to a lot of other single female travellers and they never reported problems to myself either. Go for it! it was so easy!
