We are planning a trip to the Ukraine. What currancy is used when shopping? Do they accept dollars?

The official currency is the Hryvnia (about 7.5 to 1$). I would not expect merchants to accept $s.

I have been to the ukraine. You need to exchange your us money to Hryvnia. Here is a big tip for you. A 100 Hryvnia is about $20.00 USD. Use your money belt. If you go to Kiev, Lviv or any other major cities or even a small town. You can use a atm machine. Please remember to recode your atm card to a four(4) pin code. There are exchange booths in the centre of the cities and towns. All atms machine have the english menu. Enjoy your trip.
