I am thinking of going to Bucharest and Brasov in the beginning of November. Maybe just a day in Bucharest, and then a few days in Brasov, day tripping to Bran. What is the weather generally like and would there be any chance to ski that time of year? I understand there are some spots close to Brasov.
While searching on the internet, I can't find any reliable websites with average temperature and precipitation. I am fine with snow, but not wanting rain.

Too early for skiing. In most of Europe, the ski season doesn't begin until December.
Yes, it's too early for skiing (snow usually starts falling in significant quantities in mid-late November). The weather shouldn't be very cold, but you'll almost certainly get some rain.
You could try going into the Fagaras mountains (the highest part of the Carpathians in Romania; they're a few hours west of Brasov, though if you want to go there it might be better to choose another city as base, for instance Sibiu), but even there I doubt you'll find too much snow.
