I realize this is really late to start doing any planning for a trip to Greece for this summer.... the destination was just decided. We are thinking of using a company like Gate 1 Travel who does trips that are transportation over and back and then schedule you to visit 3 or 4 islands as independent travelers (I see that some do arrange hotels.) When I was in Greece before I just pick a room from all those being offered by locals at the pier. There will be 3 of us and I think they would feel more comfortable with bit of structure - but each day free to do what we want.
We are sorry we waited so long.............. should have planned much earlier.

Both have excellent reputations for reliability, professionalism, communication and follow-through. Both have websites. They will tailor an itinerary to fit your budget.
