Brittany - Lee hit it right on the head - no pun intended!! I just got back from both locations and actually own a place on Santorini(with a Greek Friend). These are two spectacular places and you will love both. In Mykonos be sure to rent a 4 wheeler and bike out to Paradise Beach.
In Santorini the views are amazing from any location -My favorite is from The Galina Cafe!!!

If I can only spend 7 days, how do I allot my time? Split evenly or more time at one island?

With only 7 days split your time evenly. The day you leave to go from one to the other will eat up several hours by the time you're checked in to your new hotel.
