Will I be able to make reservations for Italian trains while in Athens?

My guess would be no if you mean doing it at a rail station. Though the EU is one in many ways each country retains it's own or several rail companies. You can make reservations for trains that are a continuation of the journey from the country you are in, but usually not completely separate journeys. Of course you have the option to do them on line or go to a travel agent. However, for Italy, I have had no problems making reservations at my first station, or just making no reservations at all.
