What is the weather like at Lake Bled in early May? Is it too cold to take a day trip there? Also, we will only be there on a Saturday - will we hit big crowds?

Probably your best bet would be to go to the Trip Planner section of the Weather Underground website (website and instructions can be found under the FAQ section of this website) and put in your travel dates. It will give you an average temperature of the area for the past 12 years, which can be used as a general indication of what the weather might be when you will be there. For what it's worth, we were there in March 2 years ago and didn't find it to be "too cold," but we live in Chicago and may have a different perspective on that!
