Does anyone have a recommendation for a September trip?
I just stayed at the Hilton near Taksim Square in the newer part of the city. Not cheap but certainly safe. Excellent breakfast. Hotel restaurant very expensive.
Taksim Square is not an interesting part of Istanbul. Sultanhamet is more authentic and there are tons of hotels there including the Four Seasons (high end)) and Empress Zoé (mid-range). Oh, I just re-read your message . . . what exactly are you asking a recommendation for? A hotel? A tour? A restaurant?
the most interesting part of istanbul for me was near the spice market, across the galata bridge. there were some very nice looking hotels on that side of the water. you're right, taksim itself is quite european and not very interesting. it is a 15-20 lira taxi ride from the spice market.

September is betetr period for istanbul. It will be hot till mid Sep. and You prefer to spend time in the streets of Istanbul in Sep. Instead of August. It may be sort rains only..
Sultanahmet is much better from Taksim from historical point of view. But for Transportation alternatives without time limit Taksim is the hearth/center of European Side of Istanbul..
Taksim/Sultanahmet is about 30-45 minutes by public transportation. It depends how many days you are planniing to stay,
