Does anyone have any suggestions for truly economical accommodations in Athens that are basic (but I do want a shower in my room)clean, and relatively safe?

Economical means different things to different people. Please state your budget in Euro, not adjectives.

Hi Andreas - Here is one of my favorite in Athens - A Great location near the Acropolis. Website included and check out their rates to see if they conform to your needs. La Plaka is a excellent area with many Restaurants and Shops and is walking distance up to The Acropolis

I am traveling with an elderly Uncle and a brother. We need three beds and are hoping to find accommodations within a 55-65 Euro range per night in Athens. Perhaps there is something in the Monastiraki area or near the National Museum?

Hotwire and Priceline have been having 4 to 5 star hotels for about $89 to $100 with fees. In reading reviews it sounds like Athens has a lot of hotels that are pretty bad or unsafe feeling. You won't save much by getting a dump so you might check those web sites.
