My mother has booked me a lovely timeshare on SKiathos, in Greece. I am determining the best way to get there. I already have my plane tickets back to the states (From Gatwick) and this is making travel a bit dicey. I want to see Athens as well. Does anyone know about hydrofoils and if they serve Skiathos to Athens?

You will need to provide more details. When are you traveling and where to you wish to return to. Google will help you locate the hydrofoils (Flying Ducks?). Service to the Greek islands depends upon the seasons.
Also note that Olympic Airlines provides twice daily service non-stop Athens to/from Skiathos. The fare is $49 for the one hour flight. You can check both Olympic and Aegean Airlines for Athens/London.
If you plan to visit both Athens and Skiathos, it is wise to do the island first. By leaving Athens to last you increase your flexibility to cope with any delays you may have to/from the islands.
I think you are going to have a great trip. We have visited the sister island, Skyros, and enjoyed it very much.
No ferry from the city, but there is a bus/ferry combo from Athens that leaves frequently. The ferry actually departs from a different port, Agios Constantinos, about 2.5 hours away from the city. You can take the X93 bus from the Athens Airport to the Terminal B Bus Station for the bus to Agios Constantinos.

The BEST way is to fly from Athens to Skiathos if that fits your time schedule and your budget. http://www.olympicairlines.com/
Some companies offer direct charter flights from London to Skiathos, so that might work for you if you haven't booked your flight to Athens yet. You might be able to save money by returning to Skiathos after visiting Athens using the bus/combo option. It's worth looking into.
