We plan to fly into Venice, Oct 18, travel in Croatia, then fly out of Venice. We originally hoped to fly out of Dubrovnik Oct 2,3,4 or so but are having a difficult time getting a flight out of Dubrovnik. Any suggestions for getting from Dubrovnik to Venice? or flying in or out of a different city?

Try not flying out of Dubrovnik (too small of an airport), unless you want to go through Zagreb first. See if there are direct flights from Split. It is not difficult to get from Split to Dubrovnik - they have nice tour-style buses that run up and down the coast regularly but it does take at least 4 hours travel time (scenery is beautiful if that helps at all).

I bought tickets from Dubrovnik to Rome in June from them and there seemed to be more options and they were less expensive.
