I am in the middle of my trip planning for my Eastern European trip and was wondering of anyone can help me with day trips from Prague/Krakow and Budapest. I will be visiting Aushwitz and Eger as possible day trips...are there anymore worth checking out? I am more interested in either nature (hikes/rafting etc..), medievil architecture, or small traditional old towns to stroll around. Not much of a museum fan if this helps!

From Prague, Kutna Hora and its remarkable ossuary are a fine day trip. It's possible to do Cesky Krumlov as a daytrip, though it's a longish drive, so you don't get a lot of time there. Overnight is a lot better, so you'll have time for the river rafting there.
Szentendre is an easy local train trip from Budapest, and has a lovely small town center with lots of little shops and galleries. It's on the Danube Bend. Even if you aren't a fan of museums, make an exception for the tiny Margi Kovacs museum--her varied ceramics work will charm you.
Also on the Danube Bend is Visegard, with its 15th century ruined palace and the citadel above the town.
Sorry I can't help with Krakow, though.
That rafting in Cesky Krumlov looks really interesting. Is it worth it?
Daytrips from Prague: Castles Karlstejn, Krivoklat, Konopiste. All are short distance from Prague easily doable by train or bus. Details about them are in Rick Steves book: Prague & the Czech Republic.

I was in Prague 2 years ago and did a day trip out to Kutna Hora which I enjoyed. We took a tour through a silver mine which was pretty neat to see.
