We are interested in biking for 2-3 weeks in Croatia self supported. Any leads for bike rental of quality bikes? Any words of wisdom from those who have biked there?
We are mainly interested in the area of Split and Dubrovnik
but are brainstorming and interested in all help.

I waited a while to see if you received any responses. Try phred.org. You have to join but that doesn't mean anything. That is a hard core, self supported, bike touring group. There are people there who have ridden around the world. Someone there will have done what you want to do.
