my wife and i are arriving in Brindisi italy two day prior to our check in time in Monopoli Italy. I understand there is a hydrofoil ferry that can take us to Corfu italy. Can you tell us what you know about the hydrofoil going to Corfu and can you recommend a hotel in Corfu that would provide us with a location to explore some of the more interesting parts of the island?

Corfu is in Greece, not Italy. I'm not aware of a hydrofoil between Brindisi and Corfu and the larger, slower ferries will take up too much of your short window of time. I wanted to draw your attention to the fact that these ferries do not run every day. Before you get ahead of yourself be sure you can get to Corfu and back on the days you need to travel.

I would suggest using those two days to visit southern Puglia. Pick up a car at the Brindisi airport (or if you don't want to drive, take a train) and visit Ostuni, or Otranto, or (my favorite, but harder to get to) Gallipoli.
