I have a day in Normandy planned to visit the American battle sites, and I want to take a trip to Krakow, Poland to see Auschwitz and other sites in and around the city. I'm looking for a cheap, easy route from Bayeaux to Krakow via rail. Any help/advice is much appreciated. Thanks!

In 2001 I did part of the route you listed, from Krakow to Berlin. You could this: Bayeaux to Paris, then night train from Paris Gare de l'Est to Berlin Hbf. and Berlin to Krakow. My ride there took a bit over 9 hours daytime. It depends if you want to this straight or break it up, at least, once.
