We'd like to take a train from Zurich to Salzburg around the middle of May, 2025. Any recommendations? So far we've only seen sites with inconvenient time departures and arrivals.

As everyone else who ends up responding to your question is going to say,
you are just ahead of things. Train tickets don't even go on sale until at best
3 months until the departure date.
Have a look at the schedule for next week to get an idea of what schedules
will be like for you in May 2025.

The only direct train is the Railjet train operated by OEBB, the Austrian Natiional Railway. There will be at least one schedule overhaul in December, so look after the first of the year. Right now, I see a departure every 2 hours beginning at 6:40 am, (except no train at 8:40 am) so looks like you can take your pick.
PS, and if you look now, you will see it takes over 7 hours, but if you check a date in late November, it takes 5 hours and 23 minutes. There are currently construction delays on the rail line, which will clear up in a month or so.
