Zermatt or Grindewald in mid May??

We are planning a short visit to see/hike the alps in May. So far, fly into ZRH then to Luthern for 4n (1 d to Pilatus; 1d Rigi). Then train to lauterbrunnen for 4n (1d Murren and 1d Wengen). Thinking of Zermatt OR Grindewald for 3n before back to Spiez for 3n (1 day to Bern and 1 d to Kandersteg). Any thoughts on Zermatt for a couple of days in mid May for sightseeing and day hikes? Or stick with lower elevation Grindewald? Thanks!!

Lauterbrunnen and Grindelwald are just a stones throw from one another. No reason to do both. Zermatt is likely still in mud season in May.

I’d also recommend Grindelwald or Lauterbrunnen as there are hiking trails at lower elevations in the area that offer more alternatives.

to move your bed so often in such a close area is likely to waste a lot of time. You can get to Bern just as easily from the Lauterbrunnen valley as from Spiez. Everything on your list except for Zermatt is close to each other. I would suggest one location in the Lauterbrunnen area and in Luzern (that must be what you mean by Luthern).

Packing up, waiting to check out, checking out, relocating, checking in (often not before 3pm), unpacking and getting to know your new hotel and vicinity can really chew up a day, and it appears you intend to do it several times.

I wouldn't recommend staying in Spiez for so long. It is not so far from Lauterbrunen, and you can easily access the lakes and sites in Spiez from that area.
I was in Zermatt in May and it was lovely. I only stayed one night, opting to head to Spiez as you are doing. I regret that decision. 2 nights in Zermatt would have been better, and one night in Spiez.
