Do the major Swiss trains have WiFi to listen to music on your phone or audio books?

If by major trains, you mean the long-distance trains, then yes.

I' d download if possible in advance on your phone enough of what you want to listen to into whatever app you have for listening to audio files instead of relying on the train wifi. For example I download in advance movies and podcasts to my tablet or phone when taking long flights.
There is no Wifi on most Swiss Trains. There is Wifi at the stations, and on some international trains.
SBB has invested heavily in mobile phone repeaters in the train, and along the line, so you have very good mobile coverage. I used to commute from Bern to Zurich, and later to Basel daily, and would work on my laptop the whole way, often taking part in video conferences. And even in the Hauenstein base tunnel there was no interruption.
And since most Swiss have a phone plan with unlimited data that is suitable for the vast majority of travellers. And thus SBB has not found it necessary to invest in Wifi. It is unfortunate for tourists.

Guys who do train vlogs are really into the quality and quantity of wifi and the short answer is ... it depends, but don't depend on it.
They often just end up using their cellphone data.
I've always just listened to music that's in the music library on my phone. It's always available and doesn't cost anything. I don't listen to audio books but if I need to access anything on the internet, I just use cellular data. I always have a cellular travel plan that provides the same features in Europe that I have at home. As long as I stay within my plan limits, there's no extra cost (other than the per diem charge for the travel plan).
