We’ll be travelling to Milan on 5/23, spending 2 nights in Milan, and then taking the Bernina Express from Tirano to Chur, and spending 4 nights at an AirBnb in Chur. I was thinking we’d do day trips from here…such as a day trip to St. Moritz, a day trip to Pontresina and then a day of hiking and/or a cheese-making type of experience. Does this make good use of our time? I want to give ourselves the opportunity to settle in someplace, but not sure if Chur is the best home base? Also, not planning to rent a car…Would welcome any advice!
Chur is not exactly the most charming option. It's fine if your focus is just a transportation hub for day trips, but if you want to stay somewhere with charm and enjoy your base as well, I'd personally look elsewhere. Pontresina is recommended often.
So you just get off the Bernina Express at Pontresina. It is also very close to St Moritz if you want to visit there for a day. Depending on where you are headed next, you can continue on to Chur later, either with the Bernina Express (and pay another seat reservation fee) or regular trains.

Well as a Swiss I'd say Chur would be a fine choice. I don't think it is on the Rick Steves list, but that can be a good thing and there are lots trips and hiking you can do:
1. Tschiertschen
2. Feldis / Veulden
3. Arosa
4. Pradaschier
You might also want to consider the graubünden Pass if you intend to do a lot of trips in the area.
