Hi - looking for input on how best to get from Zurich to Murren in mid-June. Then from Murren to Florence. It seems the trains from Lauterbrunnen don't run daily to Florence. Is that true or am I not looking in the right place?

For train times, look at SBB.ch - the official website of the Swiss Federal Railways. It will give you the schedule all the way to Florence (station name is "Firenze S.M.N.") and you will see that there are several possible connections each day, taking about 6-7 hours with several changes of trains.
To get from Zürich to Mürren, the fastest train route is via Bern, but I suggest that you go via Luzern instead, using the direct Luzern-Interlaken train. Again, SBB.ch lets you look at all possible routing options using the "Via" field.

Trains never run from Lauterbrunnen to Florence. You have to connect, and each of the segments is a daily service, so no problem there.
Standard route would be Lauterbrunnen > Interlaken Ost > Spiez > Milano Centrale > Firenze Santa Maria Novella, but there will be other options. Plug your details into https://www.bahn.com/en and see what options fit for you.
