The best train is the one that gets you there. You can look up prices and times both on www.sbb.ch and www.trenitalia.com
Are you actually going to Interlaken, or are you going to somewhere actually interesting? If so, SBB can sell you tickets from Milano to about every street corner in Switzerland...
