What is the best way to travel from central Switzerland (Spiez/Kandersteg) to Bolzano Italy? Should I take the train via Zurich or Milan? Also, do I need to buy extra train ticket since I am going to Italy? I am planning to purchase the Swiss Travel Pass because I will be visiting Switzerland before heading to Bolzano to visit the Dolomites. Thank you!

The quickest option is Spiez > Brig > Verona > Bolzano — but there is construction works that could affect your route, so timing of this trip could affect that answer.

When will this be? The Brig - Milano route will be closed for several weeks this summer, and then going via Austria will be best.
And it should be obvious that for travel outside of Switzerland you would need another ticket. With the Swiss Travel Pass however you only need to pay from the border.
Fastest is indeed (when it operates) Spiez - Brig - Verona - Bolzano. You would need a ticket from Domodossola in this case.
