Is 12 min enough time to transfer trains in Vallorcine to Martigny when coming from Chamonix

These trains are designed to meet one another. For various reasons, French trains can't run on Swiss tracks and vice versa. So your train will be waiting for you and you just get off one and board the other.

The transfer only takes 30 seconds. You will be annoyed by the long wait, and will soon wish that the French coordinated their schedules with the Swiss better.
Changing trains is not more complicated than getting up from seat, walking a few meters, and sitting down in another seat. 12 minutes is a huge amount of time to change trains. Unfortunately you will probably have another long wait in Martigny.

Actually through running from Chamonix to Martigny is perfectly possible, and used to be common in the past. So it is not a train compatibility problem. The real problem is SNCF indifference.
