Train from St Moritz to Zurich.

There seem to be a lot of options travel this route.
I would like to know if there is much of a difference. I would prefer only one change and and a train that accommodates my luggage and the fastest and most comfortable.
There seems to be a number of different companies that run the trains.
I will be leaving between 9-10 am.

There are indeed trains run by different companies on that route, but that should not concern you. From the point of view of the traveller there is just the "Swiss Transportation System". This is a nationwide mass transit system.

Normal tickets are for a route, so a normal ticket st. Mortiz - Zurich is going to be valid on all trains on the route(s) you bought it for, for the day you bought it for. And normal tickets can always be bought, even on the day of travel itself.

So just pick the departure that fits your schedule. All trains have space for luggage. In my opinion the IR services that leave at 2 min past each hour are the best, and take the most scenic route. In the Schedule these are marked IR38. The RE3 services go via a different route, that is less scenic.

Not sure what "general website" is. Is it www.sbb.ch/en? That is the Swiss transport site. It does not tell you what companies operate the trains.

From St Moritz to Chur, all trains are operated by Rhaetische Bahn, and from Chur to Zurich it is SBB, the Swiss National Railway. So to get from St Moritz to Zurich you will be using 2 different railway companies. But that is trivial as everybody works together to make for seamless transport.
