I am going to be traveling from Interlaken to St. Moritz in September. Any tips on the best way to do this? We have the 15 day express passes.

Rail is usually the best option. Check out the official Swiss rail website at sbb.ch for the many options.
For the final approach to St Moritz, I strongly recommend you to go via Chur and the Albula Railway rather than via Landquart. It is much more impressive. Just look for connections with a transfer in Chur. It takes perhaps 20-30 minutes longer so no big deal.
Interlaken Ost to Bern, Bern to Zurich HB, Zurich HB to Chur, Chur to St. Moritz. About 6 hrs

More scenic route:
Interlaken Ost to Luzern, Luzern to Thalwil, Thalwil to Chur, Chur to St. Moritz would be more scenic - about 7 hrs
If you wish to spend 8 hrs on traveling, there is another route:
Interlaken Ost to Luzern, Luzern to Zurich HB, Zurich HB to St. Moritz.
The last leg Zurich HB to St. Moritz passes thru St. Gallen and Chur. Only 2 changes at Luzern and Zurich HB.

If you choose that route there is no point going all the way to Zürich, best to change trains in Thalwil.
And all trains from Zürich to St Moritz involve a change of trains in either Chur (recommended) or Landquart. The gauge of the lines to St. Moritz is not the same as the main network.
The bit of extra time to go via Luzern, Thalwil, and Chur is well worth it, in terms of scenery.
