I will be traveling from Interlaken to Milan via train on a Sunday this summer and would like to take the fastest route possible. Can someone point me to the correct train or trains to take? Thank you!

Unfortunately, the fastest route is currently closed due to construction. There is a replacement bus between Domodossola and Milan. The fastest way looks like train to Zurich, then train to Milan.
And unfortunately the replacement busses are not in the Swiss system yet. So you would need to either wait a bit, or book with Trenitalia.
Oh wow thank you I had no idea! Is there a better way to get to Milan (or to any city in Italy with an airport)? Should we rent a car and drive?
Do not rent a car, as the international drop fee will be very expensive. If you intend to fly out on Sunday, you should go the night before.
You can take the scenic route via Luzern over the Gotthard Pass. Six hours 13 minutes from Interlaken Ost to Milano Centrale. That is actually faster than the Spiez-Domodossola route even now, due to track construction around Thun.

Getting from the Berner Oberland to Milan is not a “fast” trip even when the trains are running normally.
Fastest way with the replacement bus: Depart Interlaken Ost at 5:58 am, with connections at Spiez and Brig, arrive Domodossola at 7:54 am, then the bus EC035 departingin at 8:30 am, arrive Milano Centrale at 10:50 am. Just under 5 hours.
