Does anyone know about how long it takes to get from the train station in Interlaken, to Gimmelwalk or Murren? I've been reading the guidebook, trying to decide which area to visit. The Berner Oberland looks beautiful, but I'm wondering how much of our time will be used up just getting to the towns RS recommends.

It's about 50-60 mins. depending on which you go to... and you can visit Murren and then walk down to Gimmelwald on an easy paved path.

Interlaken isn't the best base if your intent is to enjoy the mountains. Interlaken is a transportation hub and fine if you want to cover a large amount of area, but if you really want to experience the mountains of that region, I highly recommend staying in the actual mountains. Look into options like Wengen or Grindelwald. Regardless of where you stay, you're going to have transportation time getting around to see various sites, but they are all scenic train and cable car rides, so not exactly the worst way to spend your time.
www.sbb.ch (and the SBB app) is your friend here. You do not have to guess, consult guid books. You can just look up, to the minute, how long it takes to get somewhere from somewhere using public transport. And that for every point in the country...
As I recall, it's only about 20 minutes from Interlaken Ost to Lauterbrunnen, which is the rail hub for that part of the Berner Oberland. If you're planning to stay there, Lauterbrunnen makes a good home base as it's central to both sides of the valley. It's very easy to reach Mürren from there - walk across the street from the station and board the cable car that goes up the hill to Grütschalp. When you arrive there, transfer to the small mountain railway and again as I recall, it's only about another 15-20 minutes to reach Mürren. That's also a great place to stay. If you want to take that route, specify "BLM" when you buy the ticket.
As someone else mentioned, the Swiss rail website has all the details, and the Swiss are VERY punctual.
