I will be coming up from Italy (Milan) and would like recommendations on how best to experience the Scenic Railway along with time spent in the Interlaken area.

Before we get additional info, to me the best time/ scenery ratio from Milan to Interlaken is via the high level Loetschberg tunnel. You go from Milan to Brig, from Brig to Spiez through Kandersteg, and from Spiez to Interlaken. To find the route, look up Milan to Interlaken "via Kandersteg" on the SBB (Swiss Federal Railways) website or app. Travel time 4-5 hours.
The default route goes through the newish low-level tunnel and is less scenic as a result.
