Switzerland Itinerary + Travel Pass + Gluten Free Recommendations

I will be traveling to Switzerland in May and have never been!
- Would love advice on what travel pass we should get
- Would love tips on my itinerary keeping in mind that we enjoy to shop, am willing to pay once for a great view (thinking that will be cliff walk. assuming there is better if we walk but it is a fairly short trip).
- Any great gluten free restaurants in those areas.
- any other tips/advice!

Our Itinerary is below.
Day 1
Arrive at Zurich airport and go to Lauterbrunnen (we will be staying here for three nights). Do the waterfall hike and possibly dinner in Murren or Wengen.
Day2
Day trip to Interlaken. Paragliding and hopefully, we can do a free boat ride with a pass.
Day 3
Day trip to Grindelwald. Thinking of doing the first cliff walk and the karts.
Day 4
Head back to Zurich and explore the city there.
Day 5
Fly out of Zurich airport.

You realize you can do paragliding in Lauterbrunnen, right? It would be a lot more convenient for you and in my opinion, it's a prettier ride (AirTime Paragliding).
I'd suggest something like this to maximize your time:
Day 1 ---- Arrive at Zurich airport and go to Lauterbrunnen (we will be staying here for three nights). Do the waterfall hike.
Day2 ---- Explore Murren, Schilthorn and paraglide from Murren to Lauterbrunnen Valley
Day 3 ---- Grindelwald First in the AM + Kleine Scheidegg or Mannlichen if you time it correctly in the afternoon > Wengen for dinner
Day 4 ----Train to Interlaken West > board the boat to Thun (you can take your luggage) - enjoy the sites from the boat > catch the train from Thun to Zurich and explore in the afternoon/evening
Day 5 ---- Fly out of Zurich airport
