Switzerland

I'm traveling from Tirano to Chur on the Bernina Express and I want to leave Switzerland at either Basel or Zurich. I''m looking for the most interesting route tp either of those cities where I will catch a train to Paris

When traveling from Chur, the journey remains beautiful as you pass through Landquart, Sargans, along the Walensee, and then follow the Zürichsee through towns like Horgen and Thalwil. The scenery on the opposite side of the lake is likely just as charming, though I haven’t traveled that route recently and can’t comment from current experience. However, I have taken the above route both this past fall and again in early December.

You can follow this path when traveling to Zürich or continue onward to Basel.

If you take the train to Paris from Zurich the first stop on that train is Basel, so you will leave the country the same way regardless...

So the question will just be where you want to plan your stopover. You can also pick other cities, like Luzern or Bern. You do not have to break your journey in a place that has a direct train to Paris, as you can easily get a train (and a ticket) form even the smallest hamlet to Paris...
